July 23. 2016 I just loved the Lemon Cookies. I had a friend over and she couldn’t stop eating them. It’s a treat to have these cookies and especially since they are gluten, corn and dairy free ! I can’t have egg Whites so used 4- 5 1/2 egg yolks instead and they were delicious. I even frozen them (to keep from eating them all). They freeze very well and I just take out one or two when I want them.
Also I made the Spinach Pie and it also was very good. I used extra egg yolks and left out the egg whites. You have a very interesting blog … I like your comments … you are funny and have great recipes ! It makes the recipes very interesting to read because you are ”’ real”’. Thanks again.

July 24th 2016 Hi Denise, your Spinach Pie Recipe is a winner…. I made it with a modification because I can’t have Egg Whites. I used more egg yolks (approx 14 yolks) and I added 8 more Tablespoons of coconut milk to compensate for the whites not added. Added a bit more bacon also.
I enjoy reading your recipes because your sense of humor comes through and makes me simile .
The Lemon Cookies are a winner also, they are delicious and they freeze well.
What a delicious recipe for Gluten Free Lemon Cookies ! I made them this week exactly as the recipe is written and the results…. amazingly delicious!!! I had friends over and one gal ate 4 of them two with white frosting on them and two with sugar coating, she really loved them and said she could ”not” tell they were gluten free at all ! Can’t wait to make them again…. but they disappear very quickly, yummy. Thank you for perfecting these Lemon Cookies !
